  • 2 lbs beef bones (marrow or knuckle)
  • 2 cups chopped carrots
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 5 cloves garlic (whole)
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 12 cups filtered water

Instructions

  1. Preheat your oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes until browned.
  2. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for 5-7 minutes until soft.
  3. Add roasted bones, garlic, thyme, bay leaves, and enough water to cover everything by an inch. Bring to a gentle boil.
  4. Reduce heat to low and simmer for 12-24 hours (using a slow cooker) or for 4-6 hours on the stovetop.
  5. Strain the solids using a fine mesh sieve or cheesecloth. Allow to cool before storing in jars.
