  • 4 medium Hatch Green Chiles (about 200g)
  • 1 lb Boneless Chicken Thighs (skinless)
  • 1 medium Yellow Onion (about 150g)
  • 3 cloves Garlic (minced)
  • 4 cups Low-Sodium Chicken Broth (960ml)
  • 2 tsp Ground Cumin
  • ¼ cup Fresh Cilantro (chopped)

Instructions

  1. Rinse the hatch green chiles under cold water, dry, then remove tops and seeds according to your heat preference.
  2. In a large pot, heat 2 tbsp olive oil over medium heat and sauté chopped onion until golden brown (about 5 minutes).
  3. Add cut chicken thighs; season with salt and pepper. Brown on all sides (7-10 minutes).
  4. Stir in chopped hatch green chiles and minced garlic; cook for an additional 3 minutes.
  5. Pour in chicken broth to cover ingredients by an inch, sprinkle cumin, stir, and bring to a gentle simmer. Cook for 20-25 minutes until chicken is tender.
  6. Fold in chopped cilantro just before serving. Enjoy with crusty bread or tortillas!
