  • 4 medium green bell peppers
  • 1 large onion, diced
  • 1 lb lean ground beef or turkey
  • 1 cup cooked long-grain white or brown rice
  • 1 cup tomato sauce
  • 1 cup shredded cheddar or mozzarella cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the green bell peppers in half lengthwise, removing seeds and stems.
  3. In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 3-5 minutes).
  4. Stir in the ground meat along with garlic powder and chili powder. Cook until browned.
  5. Mix in the cooked rice and tomato sauce, allowing the mixture to simmer for about 5 minutes.
  6. Generously fill each pepper half with the meat mixture.
  7. Place stuffed peppers upright in a baking dish, cover with foil, and bake for about 30 minutes. Uncover for the last few minutes if using cheese to melt it.
