  • 4 poblano peppers
  • 1 lb lean ground beef or turkey
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 can (14 oz) fire-roasted tomatoes
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Halve the poblano peppers lengthwise and remove seeds.
  2. In a skillet over medium heat, add olive oil. Sauté onions and garlic until translucent (about 3-4 minutes).
  3. Add ground meat; cook until browned. Stir in cumin, paprika, salt, and pepper. Mix in half of the cheeses until melted.
  4. Stuff each pepper half generously with the filling. Place on a baking sheet.
  5. Mix canned tomatoes with seasoning; pour over stuffed peppers.
  6. Bake for 25-30 minutes until tender.
