  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium)
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables by dicing the onion, carrots, and celery into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add the diced onions and sauté until translucent (about 5 minutes).
  3. Stir in the carrots and celery; cook for another 3-4 minutes until softened.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Sprinkle in the cumin and coriander; mix well to release their aromas.
  6. Add the chickpeas and vegetable broth; bring to a boil, then reduce heat to simmer for 20-25 minutes.
  7. Stir in fresh lemon juice before serving hot. Drizzle with olive oil for added richness.
