  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas under cold water until clear.
  2. In a large pot over medium heat, add oil and sauté the onions until translucent (about 5 minutes). Add garlic and cook for an additional minute.
  3. Incorporate the rinsed split peas, carrots, celery, and vegetable broth until everything is submerged.
  4. Add bay leaves, thyme, salt, and pepper; stir well.
  5. Bring to a boil on high heat, then reduce to low heat and simmer uncovered for about 45 minutes or until peas are soft. Stir occasionally.
  6. For a creamier texture, blend the soup with an immersion blender or in batches using a traditional blender.
