  • 6 large carrots, peeled and chopped
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes).
  2. Add minced garlic, chopped carrots, and grated ginger; stir for another 2 minutes until fragrant.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender (approximately 20 minutes).
  4. Blend the soup until smooth using an immersion blender or regular blender (allow steam to escape if using a regular blender).
  5. Return blended soup to pot; stir in coconut milk, lemon juice, salt, and pepper. Adjust seasoning as needed before serving.
