  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium sweet onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 16 oz store-bought gnocchi
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme (or fresh)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the vegetables and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions, carrots, and celery until onions are translucent (about 5 minutes).
  3. Stir in minced garlic for about 30 seconds until fragrant. Add whole chicken breasts to sear slightly.
  4. Pour in chicken broth; season with salt and pepper. Bring to a gentle simmer for about 20 minutes until chicken is cooked through.
  5. Remove chicken, shred it with two forks, then return it to the pot along with heavy cream and gnocchi. Cook until gnocchi float (about 3-4 minutes).
  6. Stir in fresh spinach or kale during the last minute of cooking for added nutrition.
