Ingredients

Scale
  • 1 lb ground beef or turkey
  • 3 medium bell peppers (any color), diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup uncooked rice (brown or white)
  • 15 oz can tomato sauce
  • 4 cups vegetable broth (low-sodium recommended)
  • 2 tsp cumin
  • 2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and cook for another 30 seconds.
  2. Increase the heat slightly and add the ground meat; cook until browned, breaking it up as you go. Drain excess fat if necessary.
  3. Stir in the diced bell peppers and cook for about five minutes until softened.
  4. Add the rinsed rice, tomato sauce, vegetable broth, cumin, paprika, salt, and pepper; stir to combine.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 25-30 minutes until the rice is tender.
  6. Stir in freshly chopped herbs before serving.
