  • 8 oz Boursin cheese (garlic & herb variety)
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the fettuccine according to package instructions in salted boiling water until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the Boursin cheese until melted and smooth, approximately 2-3 minutes.
  4. Add fresh spinach to the skillet and stir until wilted, about 2 minutes.
  5. Drain the pasta, reserving 1/2 cup of pasta water, then add the cooked pasta to the skillet.
  6. Mix well to combine with the sauce, adding reserved pasta water as needed for creaminess.
  7. Finish by stirring in grated Parmesan cheese and seasoning with salt and pepper to taste.
  8. Serve immediately, garnished with extra Parmesan if desired.
