  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine or linguine
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from skillet and slice.
  2. In a large pot, boil salted water. Add pasta and cook according to package instructions until al dente. Reserve some pasta water before draining.
  3. In the same skillet used for the chicken, melt butter over medium heat. Add minced garlic; sauté until fragrant (about 30 seconds). Pour in heavy cream and simmer gently while stirring.
  4. Gradually whisk in Parmesan cheese until melted and smooth. Adjust seasoning with salt and pepper.
  5. Add sliced chicken to the skillet along with drained pasta; toss until well coated in sauce. If needed, add reserved pasta water for desired consistency.
