  • 2 lbs starchy potatoes (such as Russets or Yukon Golds)
  • 4 tbsp unsalted butter
  • ½ cup whole milk or cream
  • 2 cups chopped kale or cabbage
  • 4 green onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. 1. Peel and chop the potatoes into even chunks. Boil them in salted water until fork-tender, about 15-20 minutes.
  2. 2. While the potatoes cook, sauté chopped kale or cabbage in 1 tablespoon of butter over medium heat until wilted (about 5-7 minutes).
  3. 3. Drain the cooked potatoes and return them to the pot. Add remaining butter and milk (or cream) and mash until smooth with some lumps for texture.
  4. 4. Gently fold in sautéed greens and green onions into the mashed potatoes. Season generously with salt and pepper.
  5. 5. Spoon colcannon into bowls and add an extra pat of butter on top if desired.
