  • 1 cup sun dried tomatoes (packed in oil, chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (freshly grated)
  • ½ cup fresh basil (chopped)
  • 2 tbsp olive oil
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. In a large pot of salted water, cook spaghetti until al dente according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Stir in sun dried tomatoes and cook for another minute.
  3. Pour in heavy cream and bring to a gentle simmer. Gradually mix in Parmesan cheese until melted and smooth.
  4. Add the drained pasta to the skillet, tossing well to coat. If needed, add reserved pasta water for desired creaminess.
