  1. Gather all ingredients. Dice the chicken into bite-sized pieces and season with salt, pepper, cumin, chili powder, and garlic powder.
  2. Heat a large skillet over medium-high heat and add olive oil. Cook the seasoned chicken until golden brown and cooked through, about 5-7 minutes.
  3. Stir in sliced bell peppers and onions; sauté until tender, about 3-5 minutes.
  4. Lay one tortilla flat, add a portion of the chicken mixture on one half, sprinkle generously with cheese, then fold to create a half-moon shape.
  5. Wipe down the skillet if needed and return to medium heat with a light coat of oil. Cook each quesadilla for about 3-4 minutes per side until golden brown and crispy.
