  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 cup buttermilk (can substitute regular milk)

  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. Rinse catfish fillets under cold water and pat dry with paper towels.
  2. Soak fillets in buttermilk for at least 30 minutes.
  3. In a separate bowl, mix cornmeal, flour, cayenne pepper, paprika, salt, and black pepper.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Dredge each fillet in the cornmeal mixture until well coated.
  6. Fry fillets in hot oil for 3–4 minutes per side until golden brown.
