  • 2 large eggs
  • 1 cup panko breadcrumbs

Instructions

  1. Peel and slice the onions into 1/4-inch thick rings.
  2. In a bowl, mix together the flour, baking powder, salt, and pepper.
  3. In another bowl, beat the eggs until frothy.
  4. Dip each onion ring first in the flour mixture, then the egg mixture, and finally coat with breadcrumbs.
  5. Heat about 2 inches of oil in a deep skillet to 350°F (175°C).
  6. Fry the coated onion rings in batches for about 3-4 minutes per side or until golden brown.
