  • 1 cup fresh scallions, finely chopped

  • 3 tablespoons sesame oil
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large bowl, combine flour and warm water to form a shaggy dough. Knead on a floured surface for about 5 minutes until smooth.
  2. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
  3. Finely chop the scallions while the dough rests.
  4. Divide the dough into four pieces and roll each into an 8-inch circle.
  5. Brush each circle with sesame oil, sprinkle with salt and scallions, then roll tightly into a log and spiral it into a coil.
  6. Heat vegetable oil in a skillet over medium heat and fry each pancake for about 3-4 minutes per side until golden brown.
