  • 1 lb lean ground beef (80/20)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup BBQ sauce (plus extra for topping)
  • 1/2 cup breadcrumbs (regular or panko)
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Sauté the chopped onion in a skillet over medium heat until translucent (about 5 minutes).
  3. In a large bowl, combine ground beef, breadcrumbs, sautéed onions, cheddar cheese, eggs, BBQ sauce, garlic powder, salt, and pepper. Mix until just combined.
  4. Shape the mixture into a loaf in the prepared pan and brush with additional BBQ sauce if desired.
  5. Bake for 60-70 minutes or until internal temperature reaches 160°F (71°C). Rest for 10 minutes before slicing.
