  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic (minced)
  • 10 soft corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, sauté diced chicken until golden brown and cooked through (7-10 minutes). Add minced garlic and cook for another minute.
  3. Layer half of the tortillas in the prepared baking dish. Top with half of the chicken mixture, half of the enchilada sauce, and half of the cheese. Repeat layers.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  5. Let cool slightly before serving. Top with sour cream and chopped cilantro.
