  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) chili beans in sauce
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup coarse cornmeal
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp baking powder
  • 1 cup milk
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Add diced onion and minced garlic; sauté until fragrant, about 3-5 minutes.
  4. Stir in chili beans and diced tomatoes; simmer on low while preparing the cornbread batter.
  5. In a separate bowl, mix cornmeal, baking powder, milk, egg, and spices until just combined.
  6. Pour half of the cornbread batter into a greased baking dish. Layer the meat mixture on top and finish with the remaining batter.
  7. Bake for 25-30 minutes until golden brown.
