  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • 1 cup chopped bell peppers (mixed colors)
  • 2 cups fresh spinach
  • 1 cup grated sharp cheddar cheese
  • Salt & pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray or olive oil.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped bell peppers and spinach until the spinach wilts and peppers soften.
  3. In a large bowl, whisk together the eggs, cottage cheese, salt, and pepper until creamy.
  4. Stir in the sautéed vegetables and half of the grated cheddar cheese until well combined.
  5. Pour the mixture into the greased baking dish and sprinkle remaining cheddar on top.
  6. Bake for 30-35 minutes until golden and puffed. Allow to cool for 5 minutes before slicing into squares.
