  • 8 soft flour tortillas
  • 2 cups red sauce (homemade or store-bought)
  • 2 cups shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 cup sour cream (for serving)
  • Fresh cilantro (optional garnish)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Add chopped onions and minced garlic; cook until softened.
  2. Stir in chili powder and cumin; cook for an additional minute until fragrant.
  3. Lay one tortilla on a flat surface, spoon meat mixture down the center, top with cheese, then roll tightly.
  4. Spread half of the red sauce in a baking dish, place rolled enchiladas seam-side down, and cover with remaining sauce.
  5. Preheat oven to 375°F (190°C). Cover with foil and bake for 20 minutes. Remove foil, sprinkle extra cheese on top, and bake uncovered for another 10 minutes until bubbly.
  6. Let cool slightly before serving. Drizzle with sour cream and garnish with cilantro.
