  • 1 cup protein powder (vanilla recommended)
  • 23 ripe bananas (mashed)
  • 1 cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 2 tsp baking powder
  • ½ cup chocolate chips or berries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a large bowl, mash the bananas until smooth. Stir in Greek yogurt and honey until combined.
  3. In another bowl, whisk together oats, protein powder, and baking powder. Gradually fold into the wet mixture until just combined.
  4. Gently mix in chocolate chips or berries.
  5. Fill each muffin tin about three-quarters full and bake for 18-20 minutes until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.
