  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 cup all-purpose flour
  • 2 tbsp tahini sauce
  • 4 pita breads or wraps
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • 1 cup cucumbers, sliced

Instructions

  1. Rinse and drain chickpeas. Finely chop parsley and garlic.
  2. In a food processor, combine chickpeas, parsley, garlic, cumin, coriander, flour, salt, and pepper until the mixture is chunky yet holds together.
  3. Using wet hands, shape the mixture into small balls (about two tablespoons each).
  4. Fry in hot oil over medium heat until golden brown (3-4 minutes per side) or bake at 400°F for about 20 minutes.
  5. Spread tahini sauce on pita or wrap; add lettuce, tomatoes, cucumbers, then top with falafel balls.
