  • 1 lb fresh skinless salmon fillets
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs, beaten
  • ¼ cup green onions, finely chopped
  • 1 tbsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat a skillet over medium heat with olive oil.
  2. Cook salmon for 4-5 minutes per side until it flakes easily.
  3. In a bowl, flake the cooked salmon and mix in breadcrumbs, eggs, green onions, mustard, lemon juice, salt, and pepper until combined.
  4. Form the mixture into 8 patties (¾ inch thick).
  5. Cook each patty in the skillet for 4-5 minutes on each side until golden brown and crispy.
  6. Serve hot with your favorite dipping sauce or atop a fresh salad.
