  • 2 large red bell peppers (roughly chopped)
  • 4 garlic cloves (peeled)
  • 1 tsp cumin seeds (toasted)
  • 1 tsp coriander seeds (toasted and ground)
  • 2 tsp smoked paprika
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Roast the chopped red bell peppers for about 20 minutes until tender and slightly charred.
  2. In a dry skillet over medium heat, toast cumin and coriander seeds for about 3 minutes until fragrant. Let cool.
  3. In a food processor, combine roasted peppers, garlic, toasted spices, smoked paprika, lemon juice, olive oil, salt, and pepper. Blend until smooth.
  4. Taste and adjust seasoning if necessary. Pour into an airtight jar and drizzle with olive oil before sealing.
