  • 2 pounds fresh green beans, trimmed
  • 2 teaspoons pickling or kosher salt
  • 4 cups filtered water
  • 1/4 cup vinegar (optional)
  • Garlic cloves and peppercorns (optional)

Instructions

  1. Sterilize jars and lids in hot soapy water.
  2. Preheat a water bath canner or large pot filled with water to 180°F (82°C).
  3. Snap off the ends of the green beans and pack them upright into sterilized jars, leaving about an inch of headspace.
  4. Add 1 teaspoon of salt per quart jar.
  5. Boil water and pour it over the beans until fully submerged, maintaining an inch of headspace.
  6. Wipe jar rims clean, seal with heated lids, and process in boiling water for 20 minutes (pints) or 25 minutes (quarts), adjusting for altitude if necessary.
  7. Remove jars and cool completely on a towel-covered surface.
