  • 2 medium carrots, diced
  • 2 stalks celery, chopped

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions
