  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can kidney beans, rinsed
  • 1 (15 oz) can black beans, rinsed
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 2 cups low-sodium beef broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onion and minced garlic until golden brown (3-5 minutes).
  2. Add ground beef (or turkey) to the skillet and cook until browned (5-7 minutes). Drain excess fat.
  3. Transfer the meat mixture to a crockpot. Add diced tomatoes, kidney beans, black beans, bell peppers, chili powder, cumin, and beef broth.
  4. Stir well to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Taste and adjust seasoning before serving with desired toppings.
