  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare the beans: If using dried beans, soak overnight and cook until tender. For canned beans, drain and rinse under cold water.
  2. Chop the vegetables: Dice bell peppers and red onion into small pieces.
  3. Mix the ingredients: In a large bowl, combine black beans, kidney beans, chickpeas, bell peppers, red onion, and cilantro. Stir gently to mix.
  4. Make the dressing: Whisk together lime juice and olive oil with salt and pepper in a small bowl.
