  • 1 lb boneless, skinless chicken thighs
  • 2 scotch bonnet peppers (adjust for heat)
  • 1 tbsp fresh thyme leaves
  • 4 garlic cloves
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp freshly squeezed lime juice
  • 2 tsp allspice powder

Instructions

  1. In a blender, combine scotch bonnet peppers, garlic, thyme, soy sauce, brown sugar, lime juice, and allspice until smooth.
  2. Marinate the chicken thighs in the mixture for at least 2 hours or overnight.
  3. Preheat your grill to medium-high heat (400°F/200°C).
  4. Remove excess marinade from the chicken and grill each side for 6-8 minutes until charred and the internal temperature reaches 165°F (75°C).
