  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Optional: ½ cup sour cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds; place them upright in a baking dish.
  2. In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it apart as it cooks.
  3. Stir in the cooked rice, black beans, taco seasoning, and half of the cheese until combined and heated through.
  4. Generously spoon the filling into each pepper and top with remaining cheese.
  5. Cover with foil and bake for about 30 minutes. Remove foil in the last 10 minutes to allow cheese to melt.
