  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced into half-moons
  • 2 tbsp olive oil
  • 2 tsp fajita seasoning (store-bought or homemade)
  • 4 flour tortillas
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. Slice bell peppers and onion thinly for even cooking.
  3. In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and pepper to create the fajita spice mix.
  4. Heat olive oil in a large skillet over medium-high heat until shimmering. Sauté onions until translucent; then add bell peppers.
  5. Add shrimp and spice mix to the skillet. Cook for about 3-5 minutes until shrimp are pink and opaque.
  6. Remove from heat; squeeze fresh lime juice over everything and serve immediately with warm tortillas and toppings.
