  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp taco seasoning
  • 4 cups low-sodium beef broth
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey for about 5 minutes until crumbly.
  2. Add chopped onions and bell peppers; sauté until softened (3-4 minutes).
  3. Stir in taco seasoning and canned tomatoes; cook for an additional 2 minutes.
  4. Pour in beef broth along with black beans and kidney beans; bring to a gentle boil.
  5. Reduce heat and simmer for 15-20 minutes to allow flavors to meld.
