  • 1 cup wild rice
  • 1 bell pepper (any color), diced
  • 1/2 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup toasted pine nuts
  • 1/2 cup dried cranberries
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear. In a saucepan, combine rice with 3 cups water and a pinch of salt. Bring to boil, then reduce heat to low. Cover and simmer for 45-50 minutes until tender yet chewy.
  2. While the rice cooks, prepare the vegetables: dice the bell pepper, cucumber, and red onion.
  3. Once cooked, drain excess water from the wild rice and let cool slightly before combining it with the chopped vegetables in a large bowl.
  4. Add dried cranberries and toasted pine nuts to the mixture.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper.
  6. Pour the dressing over the salad and toss gently until well combined.
  7. Cover and chill in the refrigerator for at least an hour before serving.
