Ingredients

Scale
  • 1 lb lamb or beef chunks (bone-in recommended)
  • 4 medium potatoes (Russet), diced
  • 3 medium carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef or chicken broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Water as needed

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the lamb or beef chunks and brown on all sides.
  2. Once browned, add chopped onions and minced garlic. Sauté until onions are translucent, about 5 minutes.
  3. Stir in the diced potatoes and sliced carrots, mixing well.
  4. Pour in the broth and enough water to submerge the ingredients. Bring to a gentle boil, then reduce heat to simmer.
  5. Add thyme sprigs and bay leaves; let the stew simmer partially covered for 1.5 to 2 hours until meat is tender.
  6. Remove herbs before serving hot with crusty bread.
