  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • 2 tbsp cornstarch
  • 1/2 cup heavy cream
  • 4 oz bittersweet chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a mixing bowl, beat sugar and butter until light and fluffy.
  3. Add eggs one at a time, followed by vanilla extract and milk. Mix until smooth.
  4. In another bowl, whisk together cake flour and baking powder. Gradually fold into wet ingredients until just combined.
  5. Divide batter between pans and bake for 25-30 minutes or until golden brown.
  6. For the custard filling, whisk egg yolks with sugar and cornstarch in a saucepan over medium heat. Gradually add milk while stirring until thickened (about 5-7 minutes). Stir in vanilla extract; cool completely.
  7. For the ganache, heat heavy cream until simmering, pour over chopped chocolate, let sit for 5 minutes, then stir until smooth.
  8. Assemble by layering cakes with custard in between and ganache on top. Enjoy chilled or at room temperature.
