  • 1 cup strong brewed coffee (cooled)
  • 2 tablespoons granulated sugar (for coffee)
  • 1 cup mascarpone cheese
  • ¼ cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 2 large eggs (separated)
  • 20 soft ladyfingers
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup whole milk

Instructions

  1. Combine strong coffee with 2 tablespoons of sugar; stir until dissolved. Set aside.
  2. In a bowl, mix mascarpone cheese, ¼ cup sugar, and vanilla extract until smooth.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold yolks into the mascarpone mixture.
  4. Carefully combine the egg whites with the mascarpone mixture.
  5. Quickly dip ladyfingers in the coffee mixture and layer them in a dish.
  6. Spread half of the mascarpone filling over the ladyfingers; repeat layering.
  7. Dust cocoa powder on top and refrigerate for at least four hours before serving.
