  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup unsalted butter (melted)
  • 1 cup heavy whipping cream
  • 1 cup tart cherries (fresh or jarred)
  • ½ cup chocolate shavings (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine flour, cocoa powder, baking powder, sugar, eggs, buttermilk, and melted butter until smooth.
  3. Pour the batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  4. Allow cakes to cool in the pans before transferring them to wire racks.
  5. In a chilled bowl, whip heavy cream until soft peaks form; gradually add sugar and vanilla extract until firm peaks form.
  6. Assemble the cake by layering one chocolate cake on a serving plate, topping with whipped cream and half of the cherries, then adding the second cake layer.
  7. Frost the top and sides with remaining whipped cream and sprinkle with chocolate shavings.
