  • 2 fresh lobsters (about 1.5 lbs each)
  • 4 tbsp unsalted butter
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp tomato paste
  • 1/2 cup dry white wine or brandy
  • 4 cups fish stock or broth
  • 1 cup heavy cream
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the Lobster: Boil lobsters for 8-10 minutes until bright red. Cool, crack, and reserve meat.
  2. Sauté Aromatics: In a large pot, melt butter over medium heat. Add shallots and garlic; sauté until translucent (3-4 mins).
  3. Add Tomato Paste & Wine: Stir in tomato paste; then add wine, scraping the pot's bottom. Reduce for 2-3 minutes.
  4. Simmer: Add fish stock, thyme, and bay leaf. Bring to a simmer uncovered for about 20 minutes.
  5. Creamy Bliss: Remove bay leaf; stir in heavy cream and simmer for another 5 minutes.
  6. Incorporate Lobster Meat: Chop reserved lobster meat and fold it into the bisque; heat for an additional 3-4 minutes.
