  • 3 ripe bananas (mashed)
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp cinnamon
  • 2 tsp active dry yeast
  • 1 cup whole milk (lukewarm)
  • 2 tbsp butter (melted)
  • 2 eggs (beaten)
  • 1 cup powdered sugar (for glaze)
  • 1 tsp vanilla extract

Instructions

  1. Warm the milk until lukewarm and mix in yeast; let sit for 5 minutes until foamy.
  2. Mash the bananas in a separate bowl.
  3. In another bowl, whisk together flour, sugar, cinnamon, and salt.
  4. Combine the yeast mixture, mashed bananas, melted butter, and beaten eggs with dry ingredients; mix until combined and knead for 5 minutes until smooth.
  5. Allow dough to rise in a greased bowl covered with a towel for about 1 hour or until doubled in size.
  6. Roll out dough into a rectangle, spread with melted butter, sprinkle with sugar and cinnamon mix, then roll tightly into a log.
  7. Slice into approximately 12 rolls and place in a greased baking dish; let rise for an additional 30 minutes before baking at 350°F (175°C) for 25-30 minutes or until golden brown.
