Ingredients

Scale
  • 34 lbs chuck roast
  • 4 garlic cloves, minced
  • 2 tsp cumin
  • 23 chipotle peppers in adobo sauce (adjust to taste)
  • 1 cup low-sodium beef broth
  • 1 onion, diced
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Trim excess fat from the chuck roast and cut into large chunks; season generously with salt and pepper.
  2. Heat oil in a skillet over medium-high heat; sear meat until browned on all sides.
  3. Remove meat and sauté the diced onion until translucent; add minced garlic and cook for an additional 30 seconds.
  4. Blend chipotle peppers, cumin, lime juice, and beef broth until smooth to create the sauce.
  5. Return meat to the pot with onions; pour sauce over and stir well to coat.
  6. Slow cook on low for 8 hours or high for 4 hours until tender; shred beef before serving.
