  • 2 medium yellow onions, diced
  • 5 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped (adjust for spice)
  • 2 tsp ground cumin
  • 1 cup low-sodium beef broth
  • Juice of 2 limes (about 1/4 cup)
  • Fresh cilantro for garnish

Instructions

  1. Trim excess fat from the chuck roast and cut it into large chunks.
  2. In a skillet over medium heat, sauté the diced onions until translucent. Add minced garlic and cook until golden.
  3. Stir in chipotle peppers and ground cumin until fragrant.
  4. Transfer the mixture to a slow cooker, add beef broth and lime juice, then cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the beef inside the slow cooker using two forks to combine with juices.
  6. Serve warm in tacos or burritos topped with fresh cilantro.
