  • 4 dried guajillo chilis
  • 2 jalapeño peppers, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped (for garnish)
  • 4 cups low-sodium beef broth
  • 2 tsp cumin powder
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Prepare the Chilis: Remove stems and seeds from guajillo chilis. Soak in hot water for about 15 minutes until soft.
  2. Sauté Aromatics: In a large pot over medium heat, sauté onions and garlic until golden brown (about 5 minutes).
  3. Brown the Meat: Add the chuck roast and diced jalapeños to the pot; brown all sides for approximately 10 minutes.
  4. Blend the Broth: In a blender, combine soaked chilis with beef broth, cumin powder, lime juice, and salt; blend until smooth. Pour over meat in the pot.
  5. Simmer: Cover and simmer on low heat for about 3 hours until meat is tender.
  6. Assemble Tacos: Shred cooked meat using forks. Serve on warm tortillas topped with cilantro and onion. Optionally dip in leftover broth.
