  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 cup fresh or jarred cherries
  • 2 cups heavy whipping cream
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, milk, melted butter, and vanilla until smooth.
  4. Gradually fold wet ingredients into dry mixture until just combined.
  5. Divide batter between prepared pans and bake for about 30–35 minutes until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring them to wire racks.
  7. Assemble by placing one layer on a serving plate; spread whipped cream on top and layer with cherries. Add the second layer and frost with remaining whipped cream. Garnish with chocolate shavings.
