  • 4 large bell peppers (red or yellow)
  • 3 boneless chicken breasts (about 1.5 lbs)
  • 1 cup buffalo sauce (or to taste)
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions (finely chopped)
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds. Drizzle with olive oil and place them cut-side up in the baking dish.
  3. In a skillet over medium heat, cook the boneless chicken until golden brown, about 5-7 minutes per side. Remove from heat and shred the chicken.
  4. In a bowl, combine the shredded chicken with buffalo sauce and softened cream cheese until well mixed.
  5. Generously fill each bell pepper with the buffalo chicken mixture and top with shredded cheddar and mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.
