  • 1 can (15 oz) black beans, rinsed and drained
  • 6 flour tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • Sour cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked.
  3. Add chopped onion and bell peppers; sauté until softened (about 5 minutes).
  4. Stir in black beans, salsa, cumin, and chili powder; simmer for 5 minutes.
  5. In a greased baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese.
  6. Repeat layers with remaining ingredients, finishing with cheese on top.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
