  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk (full-fat recommended)
  • 4 tbsp butter
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp garam masala
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season lightly with salt and pepper. Place in the crockpot.
  2. In a skillet, melt butter over medium heat and sauté garlic and ginger until fragrant (1-2 minutes).
  3. Add diced tomatoes, cumin, coriander, garam masala, salt, and pepper to the skillet; stir well.
  4. Pour in coconut milk and mix thoroughly. Transfer the mixture to the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
