Ingredients

  • 1 cup sushi rice
  • 3 tablespoons sushi vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 sheet nori (seaweed)
  • ½ cucumber, sliced into thin strips
  • 1 ripe avocado, sliced into ribbons
  • ½ cup imitation crab meat (or real crab)
  • Soy sauce (for serving)
  • Wasabi (optional)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions until tender and sticky.
  2. Mix sushi vinegar, sugar, and salt in a bowl until dissolved. Gently fold into cooked rice.
  3. Prepare fillings: slice cucumber and avocado.
  4. Lay nori shiny side down on a bamboo mat. Wet hands to prevent sticking; spread rice evenly over nori.
  5. Place cucumber, avocado, and imitation crab horizontally across the center of the rice.
  6. Using the bamboo mat, roll away from you while pressing gently to create a tight roll. Seal with water on the edge of the nori.
  7. Slice with a wet knife into bite-sized pieces and serve with soy sauce and wasabi.
