Ingredients

  • 1 gallon whole milk
  • 1/4 tsp rennet
  • 2 tsp salt (sea salt recommended)
  • 1/4 cup citric acid (dissolved in 1/4 cup water)
  • Non-stick cooking spray (for greasing)

Instructions

  1. Pour the whole milk into a large pot and heat over medium heat until it reaches 190°F (88°C), stirring gently.
  2. Remove from heat and stir in the dissolved citric acid. Add rennet and mix gently.
  3. Cover the pot and let it sit for 5-10 minutes to allow curds to form.
  4. Cut the curds into small cubes with a knife or spatula and let them rest for another 5 minutes.
  5. Return the pot to low heat, stirring gently until the temperature reaches 105°F (40°C) to firm up the curds.
  6. Pour the mixture into a colander lined with cheesecloth to drain excess whey. Rinse briefly under cold water and mix in salt to taste.
